Listen to what she is saying.
She took a genetics test and it indicated that she had some significant quantity of European ancestry. This is a serious challenge to her world-view, because she does not identify as white, and yet she knows that "whiteness" is something which is inherited by way of skin and ancestry, and her identity as an "indigenous", "Latinindad" person has been existentially challenged.
Normal, healthy individuals don't think this way. They understand intuitively that the sum of one's experiences can't be boiled down to their genetic ancestry. And yet this is the sad state of the modern left. We are going to look back in 50 years and be embarrassed that these people inhabited our country.

To the best of my knowledge, Irish and Germans and whatnot were never considered non-white, only Southern Europeans and Slavs were for a brief period.
Yes, the demarcation of the dominant social group changed over time, from white anglo-saxon protestant (WASP) to white protestant to just white, so this shows that the in-group vs out-group boundaries are subject to the effects of cultural and demographic change. At the same time, it shows that the dominant social group was always defined by more factors than skin color or ethnicity alone, and that whiteness itself was not used as arbitrarily as you suggest.
I hope you realize that a very broad swath of latinos, probably the majority of them, are, to some degree, the descendants of European settlers and conquerors, so that the notion that there is any inherent contradiction between her "latinidad" and whiteness (in the sense of European ancestry) is ignorant and amusing.
Of course it is wokeism, it's actually almost a textbook example.
- She is very much playing into the woke mindset of a fierce and irreconcilable contrast between white slavers/racists/beneficiaries of unearned privilege on the one side and oppressed/exploited/enslaved/disadvantaged blacks, latinos and indigenous people on the other side.
- The drama she sees in the fact of her partially white ancestry has a strong similarity to the (racist) idea of 'racial impurity', just this time with the roles reversed. (She quite explicitly stated that she and her social circle consider whites to be inferior in some sense.)
- The way she defines herself via her group identity instead of as an individual, and how she's clearly juggling for victimhood status, are also typical of the contemporary woke zeitgeist where victimhood and belonging to the right identity group comes with very tangible perks.
- And last but not least, the petulant defiance of biological facts in favor of feelings and arbitrary self-definitions ("I am a strong and beautiful pansexual attack helicopter, and you have no right to tell me otherwise!!!") is also typical of the woke left.

leave it to racists like that person and the sun-allergic little fella thor to come up with that spirit bomb of a doozy
