No you don't understand how things work. China most certainly will sink a US ship one day, and the only US response will be to go home. With every day that goes by China becomes stronger and more capable of defending it's claimed territory. Invasions of territory are a declaration of war, so China would only be responding in kind. The US remains arrogant and intent on forcing things it has 0 capability to enforce. It is only a matter of time before China has had enough.
China is putting it's fingers in as many pies as possible, making friends with dozens of nations that have been ignored and trampled on by the West for decades or centuries. You'll be in for a shock when more of the world sides with them than the US the day it happens.
Meanwhile, in reality, the Chinese belt and road initiative is a huge failure and their push into Africa is starting to go sour too; for example, they were kicked out of Congo a few days ago while they had hoped to secure precious cobalt mines:
