Wet markets, like anything, can be done a right and a wrong way. As long as they are hygienic about their meat there's nothing inherently wrong with a wet market. The big issue comes when you have livestock inhabiting the same space as people before or during slaughter, or spoiled meat. But again, not inherently bad.
Pretty sure that the hazards posed by live animals and parasites / infectious agents / biohazards from slaughter, are very much inherent to wet markets.
I mean, you can operate a boat the right way or the wrong way, you can take safeguards like having life jackets and lifeboats, but the risks of drowning are still inherent to standing on something floating in the ocean.
