that's one of those things that only make sense if you don't think about it for more than a second. sounds reasonable at first, but simply doesn't apply to the real world.
it is commendable to be curious, think critically about things, and challenge established norms or "wisdoms" that simply don't make any logical or practical sense, question certain rules and generally accepted standards. that does NOT mean you should simply dismiss or have to question everything you have been taught at school / university.
being a critical thinker does NOT mean to outright dismiss every aspect of human knowledge, every scientific consensus that you personally couldn't even hope to really comprehend, let alone prove yourself with the limited knowledge one human being can acquire during their life time on any given subject. with that attitude, we'd still be roaming the savannah with spears in our hands, looking for our next meal to kill...
if you want to know what makes sense to challenge, just ask yourself a couple of core questions:
- is it even remotely feasible that what i'm "challenging" could have been kept a secret / hidden from society and scientists in the respective field in the past?
- have there been serious experts on the issue challenging it prior?
- is there any good (material / strategic / spiritual...) motive of deliberately withholding or misinforming the general public about it, and would that reason benefit everyone conspiring? (if not, go back to point 1)

if you didn't prove / see / perfectly understand it yourself, you're a sheep for accepting the general (scientific) consensus" notion is just frustratingly dumb. it's one of those bumper sticker slogans that only genuinely stupid people consider smart or enlightened.
in reality, the vast majority of the self-proclaimed "just a critical thinker / just asking questions" community simply REJECT every evidence that goes against their chosen narrative, in favour of unscientific anecdotes by fellow conspiracists. it's the exact opposite of thinking independently or critically.
