While All theological texts are fictional. It can be good to read. Culture is important.

But any abrahamic religious texts are good reads.

Bible (oldest version you can find)
Quran
Tanakh

All three religions, started from the same point. So it's good to get a feel for all 3. Islam, Judaism, Christianity.

They are all quite similar. So my suggestion, is to cover all 3.

I didn't list in any particular order. And all 3 religions are basically the same creation myth with few differences.
