I have some knowledge on this topic as an amateur bodybuilder & chemist (who has stayed away from AAS). When you introduce an exogenous hormone, the natural production of that hormone is shut down due to feedback loops. You need additional chemical therapy to re-stimulate natural production in adulthood, and even then it's not perfect. Many young idiots destroy their natural hormone system for life abusing AAS and are stuck on TRT for the rest of their lives.

You don't get to "redo" puberty if you change your mind in adulthood. Puberty happens once, and if you unnaturally disrupt that process, that's it.
What you're describing is different than how puberty blockers work. Once discontinued, the body will go through its natural puberty trajectory.
