According to the wiki, which is pretty spot on here, theft is the taking of another person's property or services without that person's permission or consent with the intent to deprive the rightful owner of it.

Do you consider it consent to taxation when filling out necessary tax forms when starting a new job?

Nope. It's not a choice I've made to pay tax, it's a choice I've made to avoid being collected by armed thugs, caged and held for ransom. Acquiescence to extortion is not consent.

Wouldn't the other option be to not take the job?

It was a condition to accepting the job. I doubt the employer would have hired you if you objected to paying taxes in the interview.

The luxury of not working is left to those of incredible means in the first place.

My employer is bound by the same fate. Hire me and face the same punishments.

Not quite. You would lose a job, he would lose his company... if neither of you paid taxes.

Wouldn't this imply that all people have the right to a certain quality of life?

If by certain quality, you mean "be alive," then yes. "arbeit macht frei"

I would go to prison for tax evasion and so would he.
