Yeah we can quantify them. Agriculture only accounts for 9% of US CO2 emissions equivalent. All of the beef production process, including dairy, is responsible for 1.9%. Cattle feed production is at least half that, equipment and transportation and dairy processing is another chunk, and some small fraction of 1% of US emissions come from cow farts. However, that's ignoring the carbon balance and looking only at gases released- carbon is sequestered from the atmosphere by the photosynthesis of the grass and crops used to feed cattle, which is deposited in lovely cow patties. So in terms of the cows eating and farting alone and ignoring the macro processes surrounding production, cows are either climate neutral or actually reducing global warming.
