Don't know for sure, but NC allows ballots to be counted until Nov. 12th if they've been post-marked by election day.

Those states allow in-person registration the day of the election, and those numbers don't show in the "registered voters" database.

From what I've heard, since NC can accept ballots for up to 9 days, they've said they're not announcing any interim results until everything has been counted.

Ofc they don't. And you know this... how?
I mean being as how it takes a computer a microsecond to update it's database, and some clever lad just happened to be faster than a computer, to get that pic. :-)
