I believe that these traits evolved, because white people's ancestors needed to have attractive physical looks in order to survive. I am sure we all know that people treat other people differently based on how they look and that better looking people get better treatment. It's the same principle back on Mount Caucasus. It was an extremely harsh environment, and people needed help from others in order to survive. Help in hunting, or help in caring for one's offspring...etc. And by having blond/red hair, blue/green eyes, and therefore being more attractive, it increased the odds of survival, because people were more willing to help those who were better looking. This had an enormous survival advantage.
Also, parents also tend to favor fairer looking offspring. Have we heard of the term, "fair-haired child"? It means a favored child. And this makes sense. Blond hair is attractive, therefore the blond child will receive more attention, food..etc and just resources in general. This helped them survive better.
