Why? I would hope academic credentials drive admissions regardless of general population demographics. If Asians and Jews applicants have better backgrounds on average, they should be overrepresented. Likewise, if African American or Caucasian applicants have worse backgrounds on average, I want them to be underrepresented.
Plus, it also depends on the demographics of applicants, which may not itself even reflect the general population.

I think that is mostly true but with 65%+ of our society also being white, it would make sense to see a high representation of exceptional white folks and other groups.
It's unconstitutional, as was decided in I think a case involving Michigan's law school giving people "points" in a ranking system for choosing applicants based on their ethnicity. Maybe it happens, but I don't see evidence of this where you state it outright...
