You're confusing "Jewish" (the ethnicity) and Judaism the religion, as to what it means to be a "real" Jew.
This has always been an issue in describing Jewish people - it is more accurate to refer to the Jewish ethnicity as
Semitic people - the Levantine indigenous ethnicity. Historically, the Semitic people were numerous and were the leading race of the world founding multiple empires, notably Carthage which was destroyed. Now, since the only Semitic people left are for the most part Jewish, most people just call them Jewish.
When the Jewish kingdom was destroyed after the bar Kokhba rebellion, they were expelled and settled throughout Europe, notably Hispania & Germania (Sephardic and Ashkenazi respectfully) where ethnic mixing would have occurred, though minimized due to tight knit communities and lower rates of interracial marriage.
Some Jewish communities are very ethnically homogenous and some are not. Orthodox jews are quite homogenous (the big noses)
That being said, this woman does not look very Semitic imo and would have a good degree of Germanic/Nordic or other ethnicity, but it's hard to say without a DNA test.
