I guess things like HIMARS and other self-propelled artillery systems are sticking to roads, mostly? Would mud and snow seriously hinder their ability to fire and relocate? Do the Russian versions do significantly enough better in winter conditions to avoid that problem?

No idea about the HIMARS, don't have a very strong opinion on their winter war capabilities, I think it will be equally difficult for either side in those terms. The thing i think will force Ukraine to the table is the energy issue because it doesn't matter what equipment you have if you can't fuel it and the people who would man it freeze to death.
