Prostitute => cheap service with no aftermath or drama
Date => expensive outing with no guaranty of sex, lots of possible drama and an option for a relationship. Dates also cost more.
I've never been to a prostitute for a very banal reason: I don't like to sleep with people I don't know.
Also, what the fuck? You really think that's the difference in your mind. Not, you don't want to feed into a vicious industry that is horrific for most prostitutes, it's you don't like to sleep with people you don't know.
