I know in pvp its huge playing as an assassin I have difficulty killing gladiators cause of their huge defense.

I'd love to know exact stat to gain ratios.

Only one I've heard is 10 Crit Rating = 1% Chance.

Anybody know any other stat ratios?

+10 Crit - 1% up to 440, then it's +20 - 1%.

No.
physical defense reduces overall damage taken, life does nothing relatively speaking.

except increase the damage you can take...

as an assa u need crit and evasion
use daggers, scrolls, everything u can...but not potions, those are lame :D
