So I've recently picked up Maya and I've been watching some tutorials for basics etc., but I'm still very much a noob at it, so I could use some expertise.

I started a 'project' to improve myself, and I decided that I want to build a castle, and so far I've made most of the models, but I feel like they are too sharp and doesn't look realistic.

I'll show you an example of what I'm making right now, and I would really appreciate some constructive critique, since I figured that's a good way to get better.

My problem with this is that the edges are too sharp, and overall the model isn't smooth enough. What do you usually do after making the basic mesh to make it look smooth and good?
edit: also it's a bit pixelated some of the places, is there any options you need to change to render in higher quality or something?

if something has edges that are too sharp normally you would add bevels

as for rendering in high quality, you need to use hq render settings. I've always liked mentalray, I believe its standard now? If not you should look up How To

be careful though, I had a scene take me like 8 hours on a slow comp to render at higher quality

I was pm'd for further help. But like Reborn said, Add extra loops around all the edges using the bevel tool. Then you can preview with smooth mode by pressing one of the 1-4 keys. I couldn't remember which one since mine has a new hotkey for it
there really is no easier way of doing it.
