1. Animal Ethics- one believes that one should cause as little pain as possible, and attempting to not consume animals/animal products creates less pain than openly consuming said products
2. Environmental ethics- 10 lbs vegetables =1 lb beef. Eating animal products has a larger footprint than not eating them.
3. Health- this is really a stupid reason, as there are healthier ways to eat.
I'm sympathetic to the first two, I also buy into some of the philosophy of Peter Singer.
The third is a nice bi-product, but it stems more from me consciously thinking about what I eat, than from veg*nism.
I don't want to convert anyone, live the way you want, it's none of my business.
I assume you're talking about a carbon foot print, and this is only the case if you look the meet-o-factory. a farm raised cow eating the grass has much less of a foot print.
also, if animal ethics are your thing. then again, free range animals have it pretty awesome.
and as for health, well.. any diet is better then vegan.
I don't care what people do, but getting into a fad diet like vegan is from being miss lead by hipsters.
As a chef, its just bother some. as I have to deal with this on an every day basis.
