There are three primary motivations.
1. Animal Ethics- one believes that one should cause as little pain as possible, and attempting to not consume animals/animal products creates less pain than openly consuming said products
2. Environmental ethics- 10 lbs vegetables =1 lb beef. Eating animal products has a larger footprint than not eating them.
3. Health- this is really a stupid reason, as there are healthier ways to eat.
I'm sympathetic to the first two, I also buy into some of the philosophy of Peter Singer.
The third is a nice bi-product, but it stems more from me consciously thinking about what I eat, than from veg*nism.
I don't want to convert anyone, live the way you want, it's none of my business.
