you can only delete your path, or modify it

Is shift-click the way to move an anchor point? I do that and it sometimes works sometimes moves the whole fill

use the selection tool and drag a box around the anchor points you want to modify
the ones selected are filled in, the ones not selected on the same path will be open.
then use the convert anchor point tool, or shift + click w/e I don't remember
