Tl:dr version: I'm in a senior design class and we are having a high ranking professor come in and she will rank us on our appearance as if we were in an interview.
So I have a few questions:
1. Is a suit a must? or will a dress shirt + slacks + tie work? if shirt is fine, what color combo ?
2. Are black dress shoes a must? Or are other non leather dressy shoes suitable?

yes, a suit is a must. you should always dress your nicest for interviews, because it's better to be overdressed than underdressed.
your shoes should match your belt. black belt, black shoes. brown belt, brown shoes.
you should never have any visible skin during an important business deal. your socks should be high enough to cover your leg when you're sitting down, your shirt sleeve should be about 1 1/4th inch longer than your jacket sleeve when you're reaching out.
belt should just be anything without a giant belt buckle or any stupid design on it. i wear just a plain black leather reversible belt
wear a nice watch, whichever one goes best with what you're wearing
your pants should match your jacket. you're wearing a suit, afterall. we're not in the 70s anymore, so it's not okay to wear khakis with a bright orange jacket.
