when its your second portrait, your not good enough to use a portrait as a "guide" and make artistic decisions like changing the slant of the face. Also trying to do something in "picasso style" is a massive waste of time. You cannot make artistic alterations to something imitating life until you UNDERSTAND what you are drawing. When your learning, draw everything pricisely, you can stylize things once your good.
You should know the initial slant not when something is almost done, but before you have started, that way you can see on the paper where to place your features.
If you insist on drawing portraits, draw one that is straight forward, with no tilt up, down, or to the side. That will help you understand proportion without having to worry about things you dont understand
