I'm working on trying to learn line art portraits atm but my pen tool isn't creating separate paths within a single layer for some reason

The lines are so uneven

work with smaller thickness in strokes

Ar those for the major lines? I've been trying this technique I learned where you fill a path in black and pen tool just inside and then delete the front w/ pathfinder but keeping lines consistent and smooth is difficult
I stopped using strokes for the outlines as you suggested
E: Other than a few shapes on the clothes that I didn't finish
