the jewel choice depends strongly on the setups you are going to use (swap armor, dual wielding etc.).
as for ed vs max, you can run the numbers easily. max is probably the better choice here, since the helm is already ed socketed.
keep in mind that ed jewels would leave you with 3 more affixes whereas max jewels only allow for 2.
stats should have the highest prio if you can make use of them. else ar, def, dtgtm, -req (for a naga build) might be interesting.

have no clue what the jool stats are tbh in helm 40 5 6 and 40 5 7 ofc

No offense but helm jewels are obvious duped. Its a perfect lvl 18 20ed/60ar/4str/6dex and perfect lvl 30 20ed/60ar/6str/9dex mixed together to give the appearance of 2 x lvl 30 jewel non-perf stats. Since you went legit with shield jewels try to replace all with gg legits.
Then I can rate char as 9+/10
