Berries and cream.

Had a day off yesterday, so I got some fresh fruit from a local farmer's market. I wanted to work on plating, and some spherification, so here's the end result. Something similar will probably show up on the tasting menu next month since there's so much good, local produce right now.

This is simply local strawberries, blueberries, peaches, shaved grapes/ blackberry gel/ mojito spheres/ micro mint from my garden. It's fresh, clean, and tastes like summer.

I wish I had the ability to have such creativity in my kitchen most of what I make are for the line or for catering, we did feed the fast and the furious crew a few weeks ago though that was nifty.

Your plating is definitely showing improvements from few years ago to now.
