Gfx don’t matter in the slightest.
Would do a text based one if it was decent.

Octopath traveler is a refreshing rpg from square thats got a lot of oldschool elements that make it feel nostalgic.

If you want something thats actually old theres a ton to choose from.

Final fantasy 1-10 +tactics
Fallout 1-4 + tactics
Elderscrolls series
Ultima Series
Fable1/2
Zelda series

I love the ff series. And all the original square rpgs.
