With sliced banana, blueberry jam and fresh made/liquid chocolate mousse (not chilled and stiff).

The chocolate mousse was mixed with the leftover banana slices and chilled, made for 2 nice desserts on it's own.

Nice, but I think using a cookie cutter would give a more uniform look and a nice clean edge.
Also, seams like it would be a big mess as soon as you cut into it.
Maybe chill it after building, to help stiffen?

That's a good idea .. i have a round metal thing to cook circulated eggs with .. that would be a good idea to use that ...

Part of the beauty of this dish is to make a little mess ^^ Hehe no but if you stick the fork through and cut a nice piece, it stays remarkably coherent :) They are actually quite stiff as they are.. i would say just right..

Strong disagree with the cookie cutter suggestion. These pancakes will have variation in texture and mouthfeel.
