Does anyone have any experience with Avocado sauce?

I sometimes have such thoughts. with milk cream sauce...

certified chef here. My previous menu we attempted a sauce like this and even though the avocado was pureed into the sauce, after it being cooled down and siting over night, it would develop discoloration from the avocado being oxidized. It gave it an unappealing look.

That being said, serving it right away did work. Yes it can be a thing.

Have you ever tried avacado foam? 😁

Water and avacado (blend vigorously)
Bring up to a SLIGHT heat. Add soy lecithin and use an Emerson blender at a angle above the surface / below the surface and blend to create a foam like creation, spoon onto plate for garnish.🥰🥰

Add acidity to help, lime juice is a great alternative here
Also Avo doesn't take well to heat, so adding it after everything else has cooled would also be the best route
