Fire roast them for a different flavor profile. You can achieve this with both a gas or electrical range.
Create salads. Mediterranean style, Asian flavors, fatass ranch, simple olive oil + salt pepper.
Quiches/casseroles are a good way to enjoy them.
Pickle them. Flash pickle or long term. This works for certain fruits and fruit rinds too.
Plain vegetables with a dipping sauce or a whipped butter or whipped compound butter.
Dehydrate them
Hold your nose and just force it.. vegetables aren’t just as bomb as proteins or junk food, they’re some times far better.
