I would buy a used sony. I started on the a5300 and worked my way up to a A7iii and it's been amazing. Highly recommended. I have some friends that swear by Canon and Nikon though. You can't really go wrong tbh it's more about the photographer than the camera, all decently new cameras will be decent and a great lens is not hard to come by on marketplace etc.

Can tell you that 200-eur camera with 500-eur lens are doing much better stuff then 2000-eur camera with 200-eur lens.

So, recalculate your budged because you have to buy both camera and lenses. Some cameras came with kit lens (shit lens).
You may still enjoy photography with kit lenses but getting a better lens will do a huge difference.

When you are buying a used camera you have to be sure how much shutter count it have. Canon 5D2 can break after 50k-150k shots with average around 140k-150k. Just google some shutter life stats. eg: https://olegkikin.com/shutterlife/canon_eos5dmkii.htm

You should avoid buying cameras what are very close to the average shutter lifespan. It's like buying a used car with huge distance traveled (well used).

The Sony brand is great for starting out on the journey. I personally love Canon, I used a Canon Mark 5 for a few years and fell in love with the brand.
Their EOS series are wonderful for short Videos and long days out shooting Full Frame shots. Canon also has a lot of relatively cheap extras that can be exciting to use.
