I love Viking culture and stuff like that but if I buy this game will I be lost story wise cause of the previous AC games not being played?

You won't be lost in the story, most of the story is Eivor's story, maybe 5% of the time you will randomly leave that time period and catch up with the "real world" characters, but most of the game is a fresh story with no history of the franchise required.

Odyssey yes, can't speak on Origins, never played that one.

Basically all the ac games have been identical for a decade. If you have played one you don't to play any others. Exact same shit with slightly different skin. You would have to be pretty dumb to buy any ac game until they get a little innovation.
