I just got a pretty large amount of what I believe is quality saffron.... But I have no idea what to use it in. I used a pinch in some homemade (obviously) chicken noodle soup and it really brought it up a notch. I've heard of saffron Mayo, is it worth infusing? Any recipe suggestions?

i do saffron scrambled eggs sometimes....i usually melt butter in pan over medium heat then put a dash of saffron in for a bit, then stir in scrambled eggs and still continuously stir, adjusting heat and cooking until they are how you like
