The good news is I talked to my boss, and she said her sister was excited because I text her 2 days later asking if she wanted to get something to eat. I guess we'll see what happens. If anything she seems like she'd be a really good friend

The way I see it:

She has a lot of trauma, probably from before she started drinking & many more traumatic experiences that happened while drinking.
I think you just friend zoned her, "if anything she'll be a really good friend"
Talk to boss and negotiate a raise in order for you to continue to keep her sister happy with dates and the such. You need more money for her sister.
