Just out of curiosity.
How is the business during the pandemic? As less events are being held, I would suppose catering business would be affected somehow.
With my limited experience so far it seems like it's been busy constantly. My boss has said that events and such are obviously on the decline if not all together on hold, but we are still doing a lot for take home meals (which have been on the rise since restaurants are closed) and curb side pick-up.

Jambalaya is a lowland / cajun dish
Chicken and andouille sausage stewed with vegetables and typically rice, though I serve mine over rice to keep it from gumming all up
nice, I've seen it served with penne before actually. Chicken, sausage, and shrimp too.
