Hello,
Does anyone know if I want to get into photo editing using my laptop, does the color accuracy matter on the laptop display if I'm using an external monitor? Trying to figure out if I need to focus on the monitor specs or laptop.

Only thing that would differ is if you had 10-bit color through your graphics card
so if its not you will be limited to 8 bit color
Monitor is all that matters tho, its all processed the same
my dedicated GPU allows me to do 10 bit color for my 10 bit monitor giving like 99% RGB spectrum
if you had 8 bit color you have much smaller but if its all for web you'll still at least have 99% sRGB usually which is all that matters for web based things
