have two racks of baby backs on right now.
First time trying the 3-2-1 and only used salt and pepper for a rub. After I wrapped them for 2 hours I was very impressed with how they looked. They come off the grill in 20 mins. Cant wait to see the results of a 6 hour smoke

How'd it come out? My experience is that this method only works with spare ribs as the baby backs need less cooking time because their fat content is a bit lower. Every time I've gone longer than 4hrs my baby backs get over cooked :( and become far too "fall of the bone" for me
