i think you are referring to the tCase limit which is 72c, that is much lower than the core temp limit which won't start to throttle until either 95c or 100c

In multi tasking the temp jumps drastically and then instantly throttle for him in this video...

I guess real world you won't notice these temps but OP wants to stream and game at same time so thermals may play a role in the end.
Haven't had my hands on these new intel chips long enough to overclock them myself, just long enough to assemble and pass it on.

in video stock 10700k with AIO shows 93 degrees with prime95
@5.3ghz system throttles to 5ghz and sits at 100c which once again not ideal.
