I predict i have to cook my steak to 100f to have a medium rare

if you pull it off/out at 130, it will continue to cook as it rests/you wait

Looks like your thermometer is fucked up lol
blue is 120f so if you take it out at 100 it will be raw

Ur thermo needs to be calibrated

Stick in ice water see if its 32


Also learn the hand technique for steak temps. Fuck a thermo u poke a hole and lose ur juice

meh I just did the glass of ice test and it was at 0c 30f so I think it's good

this. 130 is the target temp, not the temp to take it out at. for a steak youd take it out 5 degrees earlier.

lol, old wives tales. a steak is not a balloon, its not going to pop because you stuck something in it. youlll lose a little more juice, but not a significant amount.
