Abstinence from meat on Fridays is not only for Lent. Historically Christians, Catholics and non Catholics alike, abstain from flesh on Fridays because Christ sacrificed his flesh on a Friday.
As for Lenton observances go. Up until the time of the Industrial Age, Catholics were not to eat meat and all other products from animals whom have the same makeup as us. ( fish do not ) This has much to do with the statement from above regarding Christ’s Sacrifice but also because the nutrients we get from those products can support sexual drive. This is a problem because during the 40 days of preparation for Christ’s coming on Easter we strive to avoid worldly desires. Sex is one of those desires which we avoid.
