So here is my build:

ASUS TUF X570-PLUS
AMD Ryzen 3800
Gigabyte 5700XT
16GB Ram

not sure why, but sometimes I lose my display, and my comp just crashes.
my RGB lights on my fan sometimes don't work either, and my Armory Crate doesn't detect any devices

Anyone have any idea?

Probably ur shit gpu and its drivers.

When I go into my devices, right click and update drivers; it says they're fully updated

yeah so that's not how that works.

get DDU, go in safe mode
run that shit remove all drivers nvidia and amd to be damn safe.
boot back into os normally then go to amd's website and download latest drivers there.

Then go to mobo manufactures website and update bios and drivers.

this was pretty much a newly built computer. Less than a month old

So in a month windows can't overwrite drivers?

Not sure...

My question is, would windows install nvidia drivers for no reason?

If you don't stop explicitly tell it not to, it likes to overwrite them yes.

So an update. I updated my GPU driver last night, and the amount of crashing decreased dramatically between last night and tonight.

Tonight I only lost my display once and it only crashed once, but when I rebooted my computer, my ROG RBG lights stopped working and my armory crate didn't detect any devices anymore...

did you use ddu?
did you update the rest of the stuff as stated?
did you disable windows from over writing drivers?
