Most important thing to do after getting a good knife is learning to hone it and use a stone. 1000/3000 does the trick most of the time. Theres also going to be a small difference between German and Japanese stones that have to do with how strong the metal is in your german or japanese knives. Generally for 300 bucks id look at getting a utility knife, a chef knife and maybe a serrated; those should take care of most of your every day prep. I get almost all my work done with those three.
