I've read online I should wait until AMD releases the 16-core Ryzen 3950X to find out what motherboards will be compatible, then buy that motherboard, a cpu I can afford now and stick with that. In 3-5 years upgrade it to the (by then outdated and cheap) Ryzen 3950X.

Never build a gaming pc before, but this seems like good advice.

Thoughts?

Seems like just fine advice, really. There will obviously be new technology on boards if you wait that amount of time, but I think it will be very easy to upgrade given AMD supports their chip sockets for two-three years at a time.
On top of that, a mid-range AMD card with a decent GPU will run pretty much everything you will likely throw at it anyways (The bigger upgrade you'll probably have to do if you do this is going to be the GPU in 3-5 years.)

It seems Intel is better for pure gaming and AMD slighty worse but better with workload.

What do you recommend if I only wanted to game?

What gaming are you trying to do? I've used intel and amd varying over the years, and I have had 0 issues running either of them. Intel runs far hotter.

I honestly feel that amd directly compares to intel (or out performs) for gaming, at a fraction of the cost and heat footprint. As well as longer support for a socket type (like you mentioned in OP).

I'd recommend spending the extra money you'd spend on an intel mobo/CPU (the motherboards for intel are also more money) on a better GPU.. That will be the bigger difference.

Yep... Definitely won't need an intel my friend. Anything on the market will suffice, basically. 3+ GHz and 4+ cores is more than enough.

What if I wanted to play FFXIV on highest settings as smooth as possible?

Final Fantasy XIV: Stormblood Recommended Requirements
CPU: Intel® Core™i7 3GHz or higher
CPU SPEED: Info
RAM: 8 GB
OS: Windows® 7 64 bit, Windows® 8 64 bit, Windows® 8.1 64 bit, Windows® 10 64 bit
VIDEO CARD: NVIDIA® Geforce® GTX970 or higher AMD Radeon™ RX 480 or higher
PIXEL SHADER: 5.1
VERTEX SHADER: 5.1
SOUND CARD: DirectSound® sound card (DirectX® 9.0c or higher)
FREE DISK SPACE: 60 GB

AMD Ryzen 5 3600
MSI B450 A-Pro MAX or B450 Tomahawk MAX
2x 8GB of the cheapest DDR4-3200 CL16 RAM you can find

GPU depends on your preferred resolution and framerate...

Will those mobo's work with the new Ryzen 16core cpu?
