I'm marinating some chicken thighs for tonight.

Marinade is: soy sauce, pesto, garlic, onion powder, pepper, beef stock, raw honey (gf's dad has bee hives), sriracha, paprika, and some sambal paste.

Going to have cauliflower w/bacon and a mixed green salad (romaine, red leaf lettuce, and baby spinach).



Not sure if I want to bbq the chicken or bake it in the oven.

45mins at 415° baked would be nice

But

I love the crispy ness of a grill.

That's what a broiler pan is good for. I usually bake em at 425 for 20 minutes then 400 for 20 minutes. Then broil for about 5 or until skin is crispy. But you're right, grilling > rest

There’s something magical about just a hint of char on meat for me.
Skin crunch and juicy insides are the best

I made some the other day, poked it with a fork and it just started leaking juice lol.
