Hellsing is more episodic, so it's kinda shonen-like while ultimate is a story, but yeah it could be put somewhere else, but its not that edgy, the story isn't that good so couldnt put it in cool story either
i can somewhat understand if you're going by the tv version instead of the ultimate version. i don't know why anyone would recommend the tv version though. it's a legit mess of nothing.
ultimate would more closely belong somewhere near trigun imo.
a short story of apocalyptic proportion. more serious and brutal compared to trigun, less comedy and character attachment though.
we could definitely debate which is a better story between those 2, but one punch (especially season 1) lacked any seriousness or plot. (although it is still a great anime)
