Sansa bending the knee a Stark King of the 7 kingdoms would be inconsistent with the Northern philosophy for 2 reasons.
1- The North always wanted to be independent. Not connected to the other 6 kingdoms (not above, below or beside).
2- Even if a Stark was elected king at this council, his successor wouldn't have been a Stark (as the council state).
