I just built a new computer for the first time in years, it works fine, but I want to give it all the benchmarks to make sure the parts are at least averaging what they should be, what are the best programs to do it nowadays, mostly for cpu and gpu.

That's stress. If you meant stress test y es, aida64 is good. If you mean benchmark, look at 3dmark

3dmark time spy is what you're ultimately looking for.

cinebench is a good one to add as well.
i haven't tested the new R20 version yet though.

aida64 and prime95 are good for testing cpu thermals @ max load.

msi kombuster is also rather helpful for gpu benching

as the other guys pointed out, you do not need to do such.
if you aren't going OC your gpu, you won't need kombuster either.

get CPUID HWMonitor
it's a rather respected monitor program that will give you a good idea of thermals and load at any given time.
you don't always need it up, but it can help identify issues when they come up.
