The soup base was cooked on beef & beef bones, but you're right, there should be paper-thin strips of raw beef to dip in the soup.

If you haven't had it you will be pissed you never knew about it. Not gonna lie I delivered beer for years and one stop was a pho joint and I made fun of it every time mainly cuz I assumed it's a bowl of noddle and broth. Let me tell you... All local slices steak sliced round sliced brisket sliced beef tendon and sliced meatballs are hidden under the awesome broth. Not to mention the pile of garnishes.popped my pho cherry this year at 24yrs old lol!! EAT MO PHO
