Seasoning of choice, Jalapenos (no seeds if you can't handle the heat) + cheese on the inside, wrapped in bacon/turkey bacon depending on your pork preference.

Cook it on a higher heat away from flame and you'll be left with the most moist delicious meal you've cooked in a hot minute.

I would honestly go find some restaurant that had a nice smoker and ask if they could smoke it for you. We do that for some customers often times for free. Guy had his huge pig in there all morning lol.

Hmmm what do they do exactly just use wood burning stove and rotate it on a stick or something?
