Check headset specs first to see if they are hardware capable of true 7.1 surround sound. If they are, change the configuration of your headset in playback devices. If they are stereo only but support software enabled surround sound then consider getting Dolby Atmos for headphones. There is a Windows option for virtual surround sound but compared to Dolby Atmos it's trash, as most standard Windows options are.
