Let's say I choose to kill one of the two bosses, the room will change to whatever I killed, and then in the next incursions, it'll either upgrade or change.

But let's say I choose not to kill any of the boss (trap/monster speed) for example, will I ever get this room in my incursions or will it become void?

I feel like I'm opening EVERY room and i'm only getting shit mods and the most important ones remain at tier I or II at most

Yeah it's rng.
T2 rooms can be worth visiting as well but you can always just open the crap temple and not enter it.
Then start new incursions for another temple.
