Brine the duck overnight before cooking it.. And depending on where you live depends on how they taste... I'm from the coast, so they typically taste almost fishy...

I've eaten local duck hundreds of times.

Never had fishy duck.

Brining has a tendency to make things salty, if you live on an ocean coast I can see why you think it was fishy.

I how ever live on a fresh water coast, and the ducks taste great.

Brining is over rated and lazy. Imo.

The first thing you need to have in order to start a brine is salt.

I don't know how you do it, but if you aren't using salt, you are doing it wrong, and it's not a brine.
